Sicilians pesto

25 g pine nuts
2 cloves of garlic
2 anchovy fillets
2 cups fresh basil
1 tbsp raisins
5 tbsp olive oil

Roast the pine nuts and put them in the food processor with the garlic, the anchovy fillets, the basil (without the stem) and the raisins. Add the oil and make a smooth pesto. Let the pesto stand at room temperature for at least 30 minutes to allow the flavor to develop. Delicious as a snack on a piece of toasted bread or with pasta.
